recipe: the chicken is added last, so for a veg version simply omit the chicken or use a substitute. Everything else is vegan! Ingredients: x large red onion x large yellow onion x whole bulbs of garlic (not little cloves, whole bulbs) x moderate hunk of ginger x carrots x stalks celery x sweet peppers (I usedred,yellow,orange) x bunch green onions x - x cups water x - x cups shell pasta x-x diced chicken breasts main spices (necessary): lots of Italian seasoning extra oregano & parsley black pepper salt to taste x cubes McCormick all vegetable bouillon (I used chicken flavour) x/x - x/x cup soy sauce (I use kikkomans) hot sauce - x or so dashes complementary spices (to taste, or omit): cumin chili powder vegeta vegetable seasoning Instructions: Roughly chop all larger veggies. Crush garlic & grate ginger. Saute onions & garlic in your favourite large pot until clear. Add most of the spices (wait until broth is cooking before doing your final seasoning.) Add carrots & celery, cook a bit longer. Add sweet peppers cook another x minutes. Add water, ginger & green onions, bullion and boil for a few minutes before adding soy sauce & hot sauce. Adjust spices to taste before adding chicken & pasta. Cook another x minutes (ensure chicken is well cooked) and enjoy! Onions, garlic & ginger are great for coughs & colds. Sweet peppers are chock full of vitamins. Carrots adds what the peppers don't have. It's a hearty, savoury-sweet soup that is relatively is easy to prepare, ready in under an hour and rumoured to cure leprosy. Enjoy!
